We wanna bring something to stay out of the sun all day at the beach, would something like this work?

Hi,
Sure this would work. You won't get as much of a cooling breeze, but you will get shade.
If it is going to be really hot at the beach you are going to, you might want to consider an umbrella or shade tent.
Remember to bring empty milk containers to fill with sand or water once you get to the beach. The stakes for the tent can pull out of the sand easily if there is any wind, so just tie the containers to the corners of your tent and it won't lift/fly away on you.

I can understand a cheap Walmart version with a fly that barely covers the top . But if it is a full fly with a rating of at least 1200 mm then it is better than a tarp. Cabelas tarps are rated at 1000 mm. A mid range tent fly is 1200mm going upwards to 5000 in the higher end models . MSR Tent website said this : A 1500mm coating, for example, will withstand a 1500mm (5') column of water for more than one minute before a single drop might appear through the fabric. That's strong enough to prevent rain from leaking in a 75 mph hurricane-force storm.
I wouldn't really be too worried about getting wet from a summer rainfall in the middle of the night . Why all the panic?

Not that I use it but the tarp also keeps the sun off the tent if you are camping in july or august when a thunderstorm can easily roll in at anytime but if your tent is exposed it sucks going into a ten that feels like a sauna or when camping on the beach as soon as the sun hits that tent you have about 10 minutes to get out. You are better off safe than sorry, be it rain or sap.
What I hate seeing is when people have the ground cloth poking out from under their tent, laying there just waiting to collect any rain to pool up under the tent. Doesnt matter if you have a $500 expedition tent or a $50 walmart special that exposed ground cloth will have you swimming by morning.
