I'd like to take my girlfriend on a 2 day trip next week. Whether it is something relaxing like hanging out at a quiet beach in some state park or a nice hike through the desert, I am looking for any and all ideas.We both are both new to the San Diego area and are willing to drive probably 3 hours away to get anywhere we're looking to go. Thanks!

Go fishing at lake Wohlford. It's northeast of Escondido around 3,000 feet in elevation. They have small cabins there with a restaurant/bar setup. It's not elegant, but it makes for a fun couple of days.
Go on an overnight fishing trip in the ocean. Contact Mission Bay Sportfishing or H&M Landing for the details. Just bring up these two names online.
Camp at Green Valley Falls just off I-8. It's green and peaceful there.
There's a place in Ocotillo Wells. Take SR 78 to Split Mountain Road (It's the main T-Intersection in Ocotillo Wells) Turn right on Split Mountain Road and follow it until it ends. Drive across the desert/wash for a few hundred yards and you will see a dirt road heading west into the hills follow it as far as you can. This road actually goes for 20 miles into the Caliente Mountains. The cool thing about it is the road keeps getting gradually narrower. It starts out where a semi-truck can fit. Then a few miles later maybe the size of a camper van. A few miles later maybe a quad, then a motorcycle and finally only wide enough for a person to walk through. It's quite an experience.
It's a fun way to spend a day. Just don't go if it's going to rain because of flood danger. When you are done just pitch a tent back at that T-intersection in the campground there.

Would like to be able to see lots of stars, and even sleep in the back of my truck :P

There is no place around Long Beach where you can tent camp. There is a place, Golden Shore RV Park, where you can bring your RV, but I believe that your RV must be self-contained, ie no pickups or tent camping. A lot of RV parks have restrictions like that.
If you want to see lots of stars, go to Oscar night at the Kodak Theater or a Laker game. Other than that, there are only about 12 stars you can see in the LA night sky. You need to drive at least 100 miles away to get away from the city lights.
The closest place where you can camp like that is at Doheny State Beach. You can make reservations at www.reserveamerica.com.
